A sailor looks at Skylax - from A Gift of the Sea - A short history of yachting in the Mediterranean

This contribution explores how seafaring was practiced in Antiquity through the analysis of the data contained within the Periplous of Ps.-Skylax. Since the Periplous of Ps. -Skylax relies on maritime information dated between the 6th and the end of the 4th century BC, all the bservations presented here should be mainly referred to pre-Hellenistic seafaring. In particular, the focus will be on the way in which three different kinds of information were possibly disseminated amongst seafarers: what course to steer, how far to sail to reach the desired destination and how to sail (i.e. decisions on hugging the coast or crossing directly from one island to another, or on where and when to stop to refurbish the ships).

Skylax the Explorer

Rien de Meij

In 2021 I wrote a series of articles on the ancient ships which was published at SWZ Maritime. One of them was about a Greek captain-Skylax of Caryanda. The complete series of articles has been published in my book Periplous-A Journey through the Ancient Mediterranean.

Rod Heikell

Appendix 4 from Sailing Ancient Seas publ. by Taniwha Press UK. For the ancients navigating around the Mediterranean and down into the Red Sea and the Indian Ocean was quite probably more sophisticated than is generally imagined. Academic opinion is that there was little in the way of navigation equipment or information. This is not true from an evidential point of view and more importantly from the natural instinct of homo sapiens to draw something to help him understand, the 'picture is worth a 1000 words' perspective.

International Journal of Maritime History

Apostolos Delis

This paper is about Seafaring Lives in Transition, Mediterranean Maritime Labour and Shipping, 1850s-1920s (SeaLiT), an international research project funded by the ERC Starting Grant 2016. SeaLiT started in February 2017 and has a duration of five years. The project explores the transition from sail to steam navigation and its effects on seafaring populations in the Mediterranean and the Black Sea between the 1850s and the 1920s. In the core of the project lie the effects of technological innovation on seafaring people and maritime communities, whose lives were drastically altered by the advent of steam. The project addresses the changes through the actors, seafarers, shipowners and their families, focusing on the adjustment of seafaring lives to a novel socioeconomic reality. It investigates the maritime labour market, the evolving relations among shipowner, captain, crew and their local societies, life on board and ashore, as well as the development of new business strategies, trade routes and navigation patterns. The project offers a comparative perspective, investigating both collectivities and individuals, on board the ships and on shore in a number of big and small ports from Barcelona up to Odessa, in the Black Sea.

Renard Gluzman

The present article explores the potential of ship itineraries and further biographies (metaphorically speaking) as a form of microhistory, and as a powerful tool to weigh up large-scale processes. By following the venetian-flagged Nicolosa of 780 tons, i examine how ship biographies provides a narrative framework to amalgamate a cluster of disparate experiences at sea, shared within the same vessel of space and time. The ‘life’ of our floating protagonist opens a panorama on many facets of the world of shipping, be it social-, economic-, or environment related. it also alerts us to the potential to recapture the interrelationship of the local and the global by comparing assorted biographies of vessels operating in different maritime zones spanning over a longer period. Renard Gluzman, "Ship biographies as a form of microhistory," in Venezia e il senso del mare. Percezioni e rappresentazioni, eds. Maurice Aymard, Ermanno Orlando (Venice: Istituto Veneto di Scienze, Lettere ed Arti, VSLA, 2022), pp. 93-110.

Giulia Boetto

This course unites experts in maritime and nautical archaeology and others specialists in various scientific related fields, to discuss with course participants the full spectrum of maritime and nautical archaeology in the Mediterranean. The chosen format – a short, intense course conducted in an accelerated summer school session – allows participation by many European specialists, affording students direct contact with professionals working and studying in the fields of maritime and nautical archaeology and other related areas. This workshop will establish a creative environment for discussing the present and future of the archaeological, historical and ethnographic nautical heritage of the Mediterranean.

Mireia López-Bertran

Representations of ships, sailors and seafarers are common in many ancient societies. They were carved, drawn or painted on a great variety of raw materials - stone, wood, metal, textiles and pottery - and can be found in settings such as caves, tombs or royal palaces. Their presence at these sites raises the possibility that these images of maritime life have symbolic or ritual connotations. This paper presents examples of representations of Phoenician and Punic ships from the first millenium BC, in an attempt to understand the role of both their creators and their audiences. These images are subsequently analysed in more detail, focusing on their technical features and their historical contexts. This paper concludes with a consideration of the social and religious aspects of ancient Mediterranean navigation.

My life in boats: Travis Fox, owner of 27m superyacht Skyline

As he looks forward to his 25th wedding anniversary, superyacht owner Travis Fox tells Grace Trofa how boating has influenced his family...

I was in my early 40s when I bought my first boat. We lived in Virginia. Year after year the winters would hit and we would ask each other, “Why are we living here?” We telecommute our businesses; we could live anywhere. We wanted to stay in the US but be somewhat disconnected. Sanibel, Florida, was a real easy choice. We had a yacht in mind when we chose a house on a deep-water canal with a large dock. Our first boat was an Azimut Magellano.

We are a very adventurous family, travelling all the time, but four people and five dogs on a 15 metre boat for five-month trips got a little worn out. We needed the ability to be together but also have our own privacy.

Both our boats are Cor D Rover designs; we love his work. We talked to 18 different manufacturers but when I walked into the Horizon booth at the 2016 Fort Lauderdale Boat Show , I pointed to the model of the FD line and said, “This is my next boat.” Working with Cor [on Skyline , a Horizon FD 87] was a real treat and we have become great friends.

The bow seating is our favourite place on board; we sit and play dominos until 2am and gather there at sunsets. My personal favourite spot is the “man penthouse” [the sky lounge]: 500 square feet of walnut and leather. It was designed with business meetings in mind and when I invite clients on board we get full attendance every time.

The Exumas has to be our favourite spot. We stayed for two weeks at Hawksbill Cay; it was like camping on the water and we never saw another human. We have made the best friends ever during our trips – the farther we roamed from civilisation, the nicer the people.

This summer we will be heading up the East Coast, stopping in major cities, as we are celebrating our 25th wedding anniversary and my wife has never been to New York.

Our daughters, Kilyn and Taylor, were preteens when we started boating, lacking the confidence that comes with real-world experience and overcoming challenges. Boating has driven a huge change in them. My eldest, who’s 17, took the wheel, hailed people on the radio and drove the boat through the crowded harbour in Taiwan. She docks the boat, runs the deck and now I take orders from her.

Rod Heikell: Changing the face of Med cruising

Nic Compton

Rod Heikell published his Greek Waters Pilot 40 years ago, opening up cruising in the Med to thousands. Nic Compton meets the legendary author

Rod Heikell: The accidental sailor

Sailing was a very different sport 40 years ago.

There was no GPS, no chartplotters , no AIS , no EPIRBs, and no Gore-Tex.

What was also lacking, at least for Mediterranean waters, were proper sailing guides with maps of harbours and details of local facilities.

There was of course Henry Denham but, wonderful as they were, his books were more romantic narratives than practical guides.

That all changed when the first Greek Waters Pilot appeared in 1982.

In one move, Rod Heikell transformed the parameters of the cruising guide and created a modern, fit-for-purpose, comprehensive pilot that anyone could access.

It’s no exaggeration to say that his pilots (for the Greek edition was soon followed by editions for Italy, Turkey and France ) helped democratise the sport and encouraged a new kind of sailor to get out and explore these idyllic areas.

It’s perhaps no coincidence that the first Rough Guide came out in the same year, for what the Rough Guide did for land travel, Rod Heikell did for the sea.

It’s an extraordinary achievement for a man brought up on the other side of the world, whose family had no interest in sailing and who was actively discouraged from reading throughout his childhood.

Rod Heikell spent his early years in Tokomaru Bay just north of Gisborne.

Although it’s a stunning location, with a long sandy beach and abundant wildlife, the town also boasts high rates of unemployment and social deprivation.

After the freezing factory closed down in 1952, the population – composed mainly of maoris from the Ngati Porou tribe – plummeted from 4,000 to under 400 nowadays.

Rod’s parents ran the fish and chip shop, the ice cream shop, the petrol station and the local taxi – though as Rod is quick to point out, ‘We’re not talking empires here; it was a tiny little place.’

Yet, despite living by the sea, Rod Heikell never went out on the sea.

No yachts ever visited the isolated bay, and the only local boats were a couple of open launches used for catching crayfish.

Rod’s only experience of boating was paddling on a pond on makeshift canoes made out of old sheets of corrugated iron.

And yet the sea was ever present.

Rod Heikell: Shaped by the sea

‘It was the sea that shaped our lives,’ he writes in his 2020 memoir By the Edge of the Sea . ‘We swam in it. We dived off the old wharf down in Waima. We fished surfcasting off the beach. Around the rocky shores there were lots of crayfish and kina, sea urchins. The salt of the sea flavoured our lives and somehow ingrained itself into our being.’

When Rod was nine, his parents separated and he went to live with his mother in a council house in Auckland.

Yet, despite living in one of the capitals of sailing, the family had little to do with boats – apart from one memorable occasion when, aged 15, Rod sailed to Coromandel and back on a 32ft wooden boat with some friends.

‘On the way back, they gave me the tiller and sailing back through the night, the stars and everything else, it was magical. It was a one-off thing but it could be one of those folk memories that, in ways you least expect, fuels everything you do.’

Back in the real world, Rod managed to pursue a career in science, eventually getting a job in a timber treatment plant.

Two shocking events changed the direction of his life forever: the death of his beloved brother Douglas from muscular dystrophy, followed a few years later by his own diagnosis of skin cancer.

‘That sort of thing really wakes you up,’ he says. ‘I decided to see something of the world while I could.’

And so he headed to Europe , with the idea of completing his thesis on the history of science at Oxford University.

Instead, he started to get this ‘itch’.

Rod has since written more pilot books and books. More information at www.taniwhapress.com

Out of nowhere, he got fixated on the idea of sailing, and began reading about the subject obsessively.

Despite having almost no experience, he decided he had to buy a boat and go sailing.

With only £800 in his pocket, he scoured the coasts of England looking for a suitable vessel and eventually settled on a 20ft plywood sloop.

Roulette was powered by a 4hp Stuart Turner and had no electrics or electronics , no navigation lights and no lifejackets .

Despite this lack of facilities, Rod and his then girlfriend Bridget set off from Southampton in August 1976 and, after an event-filled voyage via the Brittany canals and the Canal du Midi, eventually fetched up in Greece in July 1977.

It was the beginning of a new era in sailing: the flotilla holiday.

After a few months working for a company based in the Ionian, Rod was headhunted by Crawford Perry Travel, a company setting up a rival operation in the Saronic Gulf.

For two years he guided, fixed and charmed a fleet of 18 Cobra 850s first around the Saronic Gulf and then the Ionian.

When he threatened to leave after the first year, the boss offered him his own Cobra 850 on very favourable terms. Rod agreed and stayed on another year.

It was seat-of-your-pants stuff. Rod had never visited many of the ports they went to and had to frantically research the place beforehand and make sure he arrived first to check the facilities so that he could play the knowledgeable host when the rest of the fleet arrived.

But Rod wasn’t a post-grad student for nothing.

He soon realised he could put that newly acquired knowledge to good use and started sketching maps of the harbours he visited and making notes about the facilities.

He turned these into a set of directions accompanied by some chat about the history of the place and the local cuisine, which CPT Cruising willingly printed to hand out to their customers.

It didn’t take a huge leap of the imagination to realise that the concept could be turned into a book.

And so in March 1980 Rod set off on an epic tour of Greece, mostly on his own boat Fiddler’s Green .

He taught himself to draw maps using basic triangulation, and took soundings with the boat’s echo sounder and an improvised leadline .

By day, he collected data using a checklist of over 30 items, and by night typed up his notes on an old typewriter.

Along the way, he was arrested four times as a spy and, as he puts it, ‘lied a lot to some very nice policemen about being an innocent tourist who liked to fish’.

Life-changing literature

He arrived back in Levkas that Christmas Eve, having visited more than 200 places which, added to the chapters he had already written, amounted to some 275 harbours, maps and pilotage notes.

It was a mammoth task by any measure, and one which would change his life.

The Greek Waters Pilot was published in 1982 by Imray , Laurie, Norie and Wilson.

To anyone who was sailing in Greece at the time (as I was) it made a huge impact. It was bold, confident and undeniably modern – a clear harbinger of things to come.

A sailor wearing a hat in his boat

Sales of the new pilot were slow to start with, but Rod went ahead and wrote the follow-up guides to Italy in 1982-3, Turkey in 1983-4 and France & Corsica in 1985.

Sure enough, from 1985 onwards sales were steady and have been, give or take a COVID-19 lockdown or two, ever since.

Meanwhile, Rod sold the Cobra 850 in 1982 and bought a 31ft Cheverton sloop called Tetranora , which he owned for 14 years.

As well as providing the means to research the rest of the Mediterranean guides, Tetra carried him through the breakup of his first marriage and on to a two-year cruise of India, Sri Lanka, Thailand and Malaysia, which resulted in the Indian Ocean Cruising Guide , published in 1999.

Three years at sea

Tetra was followed in 1996 by a 36ft Cheoy Lee GRP sloop which he named seven-tenths , a reference to the proportion of the world’s surface covered by sea.

In 2004, he married his current wife Lu (herself an experienced sailor and, it turned out, excellent electrician), and a few years later the couple set off around the world on their new boat Skylax , a Cardinal 46.

The voyage took them three years, via Panama, the Galapagos, the Marquesas, New Zealand, Indonesia, Southeast Asia, Oman and up the Red Sea back to the Med.

By the time they returned in 2010, they had enough material to completely revise and update their book Ocean Passages & Landfalls , published a few years earlier.

But, in the words of a famous song, life is what happens when you’re making other plans.

In 2012 Rod was diagnosed with tuberculosis and put on a massive dose of antibiotics.

Just like during the previous life-threatening episode, which brought him to Europe in the first place, Rod decided to do something positive in what he thought might be the final years of his life.

This time he decided to write more books – not his usual sailing fare but more personal books, this time published under his own label Taniwha Press.

It started in 2013 with The Accidental Sailor , an account of his first voyage to Greece on Roulette and a later trip down the Danube on a Mirror Offshore 18.

That was followed two years later by Sailing Ancient Seas , about his trip to Southeast Asia on Tetra , and in 2019 by The Gift of a Sea , a 366-page history of yachting in the Mediterranean.

Nic Compton sailing

Nic Compton is a marine journalist, writer, photographer and former journeyman shipwright. He grew up on boats in the Med before returning to the UK to complete his formal education. A former magazine editor, he was written 20 books, mostly about boats. Credit: Will Stirling

As if that wasn’t enough, in recent years Rod has taken to writing fiction under the pseudonym JC Graeme.

His first fictional work was the 2016 My Name Is No One , a strangely captivating retelling of Homer’s Odyssey, with Odysseus recast as a barfly and Homer the slightly creepy landlord buying Odysseus’s stories with jugs of Koan red wine.

That was followed by To Ithaca , the story of a man in search of his missing brother, set against the background of the Colonels’ brutal regime in Greece in the 1970s.

It’s quite an oeuvre: 25 books over 40 years, most of them still in print.

Yet Rod Heikell is modest about his achievements.

As he told one sailing magazine, referring to his work researching the original Greek Waters Pilot : ‘It’s hardly the labour of Sisyphus! Sisyphus didn’t get to sail into lovely places and sit with a cold glass of wine and a plate of meze, looking out over the sea.’

And that, my friends, is Rod Heikell.

Plan

Skipper Alan Weeks hails from South Africa after years with experience in geological exploration and a large construction company returned to his first passion…sailing Alan has been involved with the oceans from a very early age. His father was a professional diver and passed a love of the seas on to Alan. Since earning his Yacht Master’s Offshore License, he has logged tens of thousands of ocean miles on the north and south Atlantic, the Indian and Pacific oceans and the Mediterranean and Caribbean seas. Alan and Liz also received their USCG license and STCW 95 certification. Alan enjoys free diving, surfing, wake boarding, and kite boarding. Although he has an adventurous spirit, as your skipper, your safety is always his first concern.

Liz Weeks

Liz, your first mate and hostess was born in Jamaica and moved to south Florida as a teenager. She became a cosmetologist, a profession in which she excelled. She has natural ability to pamper others with an artistic flair. She has been sailing since meeting Alan in 1998. Both Liz and Alan enjoy fine dining-so food on SKYLARK will be delicious and beautifully presented. Liz’s cuisine is diverse and international, having been developed through her extensive travels. Her other interests include exploring above and below sea as well as the tranquility of photography, writing, and watercolour painting.

Spencer was born in Canada but has mostly lived in the US. He is an all-round mariner who is very service oriented, with a gentle & patient manner, sensitive to guest needs, and fun to be around. Charter guests love him!

  • Description

Skyelark is a luxury  Oyster 62  sailing yacht, built for elegance and speed whilst maintaining the utmost comfort for her guests both below decks and while under sail.

Designed and built as a competitive pedigree to match her beautifully drawn lines and sumptuous interior she has had many successes in ocean races and regattas.

Her sloop rig and modern design mean sailing with her can be done with just two people and she is an excellent boat to learn the ropes during your sailing holiday.

Below decks, private cabins are beautifully appointed and a well thought out layout means she is suitable for a variety of travellers; single sailors, couples or private charters of family or friends. Skyelark has a spacious saloon and a generous galley where the crew will prepare healthy and home-cooked meals after a days sailing. with full air conditioning, Webasto heating and quiet flush heads, staying abord Skyelark is more akin to a hotel than a boat!

On deck there is a large, safe and family-friendly cockpit, a lounging deck and transom seats. There is always somewhere comfortable to be, either for socialising or some quiet reflection.

A  removable bimini over the cockpit keeps the sun or the rain out, and if the weather is inclement at anchor, then a full cockpit enclosure keeps everyone snuggly warm, whilst maintaining the alfresco views.

Oyster 62 ’s are known to circumnavigate with young families on board or sail to the Arctic reaching 80 degrees north. Oyster 62 ‘s offer the perfect package of speed, elegance, luxury and easy, safe comfortable cruising – Skyelark is certainly one of the finest examples. She spends her summer sailing the UK, Cornwall and the Isles of Scilly with voyages around Scotland and the Hebrides before sailing winters in the Caribbean .

See Mark Zuckerberg’s glossy new $300M, 287-foot superyacht ‘Launchpad’

All aboard S.S. Facebook.

Mark Zuckerberg has reportedly gifted himself a $300 million megayacht, dubbed “Launchpad,” ahead of his 40th birthday.

The staggering 387-foot-long vessel was seen floating at Port Everglades in Fort Lauderdale, Fla., after arriving at its berth earlier this week, The Sun reported Thursday.

The multi-layered luxury ship’s sleek exterior was designed by Espen Øino International and boasts a steel hull and an aluminum superstructure, according to SuperYacht Times.

Reportedly ranking as the 45th largest yacht in the world, the interiors are just as aesthetically pleasing and reportedly executed by Zuretti Interior Design company, a France-based company specializing in unique and custom yacht design.

The breathtakingly beautiful floater stands out with a navy blue theme matching an American flag perched proudly on its wood-paneled stern.

There are several outdoor areas where the social media maven will be able to relax with his family and the indoor levels feature glass paneling allowing for tons of natural light.

The Feadship-built yacht, built in 2022, can comfortably fit 24 guests aboard, requires a crew of 48, and is said to cost $30 million a year for upkeep and usage, according to Superyachtfan.com .

Boatworld insiders have been buzzing with speculation that Zuckerberg is the owner of the newly minted mega-cruise ever since it made its main voyage from the Netherlands last week.

The tech titan was spotted touring the Russian-commissioned megayacht in early March, though the impressive boat didn’t arrive stateside until this week due to sanctions, according to The Sun.

The website reported that Zuckerberg purchased the pricey yacht – along with its own $30 million partner boat — most likely as an early 40th birthday present to himself.

The boat reportedly traveled to Florida after being granted special permission to be imported just weeks ahead of Zuckerberg’s birthday on May 14.

Zuckerberg’s yacht is just 30 feet shorter than the length of fellow billionaire Jeff Bezos’ 417-foot megayacht Koru, which the Amazon boss snagged for a whopping $500 million.

Zuckerberg’s rep did not immediately respond to Page Six’s request for comment.

This sail-shaped rock is the main symbol of the Russian city of Gelendzhik on the Black Sea

Gelendzhik in Krasnodar Krai is one of the most visited tourist places in Russia. And the ‘Parus’ Rock (‘Sail Rock’) is its “visiting card”. It is surrounded by pine forest and a stony beach. It was named, because of its unusual shape: it is high (30 meters), but rather thin (only about 1 meter thick) and most of it goes into the sea.

skylax yacht

But, the main mystery is a round hole about 2 meters above the water. Tourists are told the legend that it is a hole from a cannonball from the times of the Caucasian War (1817-1864). But scientists still consider the hole to be a natural and climatic phenomenon.

Earlier, Parus Rock was a part of a big mountain massif, which collapsed due to seismic activity and the rest of it took such a bizarre shape because of constant strong winds.

Cooking on a Yacht: Top Tips from Blue Water Sailors

cooking-on-a-yacht-chef-Good-sized-wahoo-that-is-excellent-eating-with-nice-white-flesh-once-bled

A good yacht chef can make or break a blue water passage. Rod Heikell provides a few tips for cooking on a yacht to make sure a long cruise doesn’t leave a bad taste in the mouth…

The days are long gone, if they ever really existed, when sailing folk opened a tin of something for dinner or like Tilman, cooked up a pot of gumbo or burgoo which was added to for weeks until it got too mouldy to eat. Most cruising people eat very well and spend a lot of time thinking about and preparing food. Over the years I’ve been putting together boat recipes and listening to lots of other cruisers who like good food and bit by bit this book ‘just growed’.

I am not a gourmet cook. I don’t even think I am a great cook. What I like is food and that naturally leads to an interest in cooking good food and once you start there is no holding back. We eat well in harbour and on passage without resorting to ready-meals or frozen made-up meals. There are a lot of tasty meals, often quite simple, that you can put together on passage when things are a bit bumpy and you don’t want to have a long list of ingredients strewn  around the galley.

Conversely there are also more complicated recipes you can cook up in harbour or in calm weather at sea. On passage from the Marquesas to the Tuamotus in the Pacific the ocean lived up to its moniker and we were becalmed on a flat sea. We adjusted the passage plan to arrive a day later at the coral pass and put together a feast while drifting around in the middle of the ocean. And of course, a bit of sauvignon blanc in wine glasses – it was that calm.

cooking-on-a-yacht-chef-Unusually-calm-evening-on-the-way-to-the-Tuamotus.-Calm-enough-for-wine-glasses-and-proper-plates.

Whatever sort of boat you are on from the humble to something that has a jacuzzi on the back where you can sip champagne, there is still the whole business of sourcing ingredients and cooking on board.

Converting skills from the home kitchen to the boat galley is not always easy and  a bit of confidence in substituting ingredients and exploring new culinary areas can make all the difference between a happy ship and mutiny. In Antigua I was cooking minted Moroccan beef and could I find mint anywhere: NO.

And then a light bulb lit up in my head and I thought I have mint sauce on board and it worked so well it’s what I use even when I can get mint. A well-stocked condiment cupboard is essential.

cooking-on-a-yacht-chef-Lots-of-local-markets-have-bottles-of-sauces-and-pastes-that-you-can-try.-These-ones-from-the-Cape-Verdes-turned-out-to-be-very-hot-chilli-wise.

I always cook a big meal before we set off. It just needs to be warmed up, some pasta or rice cooked to go with it and you have a meal ready to go in a dog-bowl for dinner. Usually there is enough for a couple of nights and then after a few days stomachs have settled down and we are ready for something else.

One solution often touted for passage-makers is that you trot along to the local supermarket and order a pallet of ready-made meals. It’s an odd one when you really have a lot of time on your hands on passage and feel you need to resort to a TV-dinner of goo masquerading as meat in a floury sauce of soya thickener. In any case you just can’t buy them in many places in the world.

There is a lot of pre-passage prepping you can do to make life easier in the galley. If you have a freezer then make up some meals or the base for meals. A Bolognese type sauce (ragu) that can be used as the base for a pasta sauce, lasagne, chilli con carne or a stewy thing. A chicken stew that can be made into a fruity curry, a Thai curry or a Mediterranean chicken stew. You can add fresh ingredients you have on board to the base dish that will lift it out of the realms of a frozen meal.

cooking-on-a-yacht-chef-Working-in-the-galley-entails-a-sense-of-balance-and-some-anticipation-of-how-the-boat-is-moving.

There are a lot of alternatives to some ingredients so you can get a dish that has texture and taste along the lines of the original recipe. Chopped basil, coriander or parsley can often be substituted for one or other. Plain yoghurt can be used instead of cream. Sun dried tomatoes instead of fresh in a salad. After a while this improvisation becomes second nature on board a boat where the ingredient list is confined.

On Skylax we don’t run the freezer as a freezer, more of a cold store, so we don’t do frozen base meals. After the pre-cooked passage meal has gone we just make things up depending on say whether the frozen chicken has defrosted or the fresh mushrooms need using. And there is always the chance of landing a fish which usually provides meals for a few days.

Most cruising yachts are crewed by a couple which makes cooking pretty straightforward. Larger crews on yachts require a bit more planning and here cooking base meals that go in the freezer are more important.

cooking-on-a-yacht-chef-The-wine-cellar-that-some-call-the-bilges.

It’s also important to plan out meals that will keep the crew happy and to find out if there are any likes and dislikes. I’ve had crew that didn’t eat raw tomatoes but would eat them cooked, crew who couldn’t stand pasta, and vegetarians including a friend who decided he would be a lapsed vegetarian on passage and thereafter always inquired on the quantities of bacon, salami, chorizo and other meaty things being shipped, just to make sure there would be enough.

Cooking on board is a celebration for your fellow shipmates helping you on passage and a celebration of food. On board Skylax everyone has to cook on passage and the cook never washes up. I don’t care whether someone cooks a simple omelette (well not too simple) or a gastronomic orgy of the senses, as long as they cook. And after all what better to do than devote some of that long graveyard watch to dreaming up a dinner to titillate the senses.

Cooking on a yacht: Galley gear and hacks

Water

On ocean crossings you often see boats loading up with stacks of bottled water. You don’t need it as most water in the world is fit to drink and in any case you are going to encounter it anyway unless you never eat ashore or have a quiet drink in a beach bar. All the glasses, plates, cutlery will have been washed in local water.

The salad will have been washed in local water and the ice in your drink likewise is from local water. If you have a watermaker on board you will have ample supplies and even if you don’t careful water management will eke out the water in your tanks. Skylax sailed around the world without a watermaker and only once encountered local water that was saline – in Neiafu in Tonga.

On board use something like a Brita water jug for drinking water. You don’t need to filter the water you wash up in or shower with. A Brita won’t remove nasties but will make chlorinated water palatable.

cooking-on-a-yacht-chef-Canned-drinks-stowage-in-the-bilges.

Refrigeration

Few boats don’t have a fridge these days and many have freezers. The question of whether to run a freezer or not is a difficult one. I’m not really advocating that you don’t have a freezer, but you do need to realise that it can hold you prisoner on board. Whether you run if from a generator or the main engine for the compressor or to charge batteries, you will have to do that twice a day morning and evening and consequently you need to be on the boat or plugged in somewhere.

I sailed Tetranora , a 31 foot old fashioned boat to SE Asia and back without a fridge. If you take care over your fresh provisions it is surprising how long they will last. And the awe with which you taste your first cold beer on arrival you will remember for the rest of your life.

After an arduous trip across the Indian Ocean we arrived at the Taj Malabar Hotel in Cochin, I can still clearly see the bottle of ale the waiter brought, the condensed drops running down the outside of the green glass, still taste even now the cool amber liquid, still remember how Frank and I looked at this apparition from heaven with something approaching reverence.

cooking-on-a-yacht-chef-A-small-investment-in-an-Easy-Yo-yoghurt-maker-ensures-fresh-yoghurt-supplies-on-passage-or-at-anchor.

Yoghurt

Yoghurt can be used for all sorts of things on board. On cereal with a dribble of homey on top. As a dressing on something like a lettuce and avocado salad: just put a dollop of yoghurt on the top with a drizzle of sweet chilli sauce. Use it instead of cream in curries, ragu, chilli sausage pasta, in fact in most dishes where you need cream. On desserts. Finely chop a little onion and add to yoghurt with some mint sauce to make a really passable Tzatziki. And more.

With an Easy-Yo you get the wide-mouthed Thermos flask and the plastic screw-cap jar that fits inside. Easy-Yo make packets of dried milk powder with the yoghurt culture (good bacteria! including acidophilus) mixed in and you just mix this up with some cold water, boil a kettle of water and fill to the top of the baffle in the Thermos flask and stick it somewhere warm. It will make yoghurt overnight and then you just stick the screw-top jar in the fridge: voila, one litre of yoghurt.

You don’t need to keep using the Easy-Yo packets of dried milk and bacteria culture. Once you have one batch, just mix up dried milk powder and add a couple of tablespoons of the old culture. Keep some back-up packets in case your culture gets a bit old.

Keeping vegetables and fruit

The trip to SE Asia and back on Tetranora without refrigeration galvanises the mind to find solutions to keeping vegetables and fruit on board when on passage. Always try to buy from a market where the veggies and fruit have not been refrigerated for transport.

Cabbage and root vegetables

Wrap in several layers of newspaper, keep in a cool dark place and renew newspaper and any manky outer leaves every 2-3 days.

Potatoes, onions & garlic

Keep loose in a cool dark place and sort every 3-4 days. Will keep up to 2 months.

cooking-on-a-yacht-chef-Veggie-stowage-in-a-dark-drawer.

Tomatoes

Keep in the fridge though if outside keep separated in something like a cardboard egg-box.

Green peppers, celery, courgettes and green beans

Best kept in the fridge as they normally shrivel up a bit if not – though they are still useable.

Bananas (& pineapples)

Don’t be tempted to buy a whole stem of bananas or they will all ripen at the same time. Same applies to pineapples which ripen at the same time. Once you get bananas tie a line to them and dangle them in the sea for a bit and watch various creatures crawl out. Then wash in fresh water.

Oranges, lemons and limes

Keep in a cool dry place and check through every 3-4 days. Limes can go sort of dry and hard on the outside but are still good.

cooking-on-a-yacht-chef-Drill-holes-in-the-_bumps_-of-the-egg-box-to-let-the-eggs-breathe.

Eggs

I don’t know anyone who covers eggs in petroleum jelly or similar to keep them fresh. Eggs will keep OK without refrigeration if you use the egg-box method. In truth most people just keep eggs in the fridge.

Even if you are keeping them in the fridge it’s useful to get some plastic egg-boxes. Drill a small breather hole in the top of each egg bubble and the eggs will be a lot less likely to go mouldy if you keep them like this. Turn the egg boxes once every 3-4 days.

Tinned stuff

Nobody varnishes tins these days and I’ve never taken the labels off and used a felt tip pen to write what a tin contains on it. As long as you don’t stow tins in the bilge there is no need to do anything. Some tins will have a use-by date on them, though I’m not too sure why.

Aluminium cans of drinks can be kept in the bilge, though preferably a dry bilge as the aluminium will oxidise, though hopefully not before you have imbibed all that beer. Tins of some food items have been replaced by tetrapaks which makes stowage a lot easier and solves that eternal problem of a tin rolling around somewhere and keeping you awake at night. Things like chopped tomatoes, passata, tomato paste, coconut milk, beans and probably a few others can now be found in tetrapaks.

cooking-on-a-yacht-chef-What-did-we-do-before-zip-loc-bags.-Pasta,-biscuits,-all-sorts-of-stuff-goes-in-zip-loc-bags-to-keep-bugs-in-or-out.

Tinned vegetables

Tinned (or tetrapak) chopped tomatoes, passata and tomato paste are essential and apparently tinned tomatoes have as many anti-oxidants in them as fresh – if you are into all that anti-oxidant stuff. In addition we carry a reasonable supply of tinned peas, green beans, mushrooms, spinach, beans of all types including baked beans, lentils, some mixed vegetables, No-one would ever argue that tinned vegetables are better than fresh, but at times they can be a life-saver and in parts of the world you just cannot get some items that adds to the overall recipe.

Tinned fish

Tinned tuna is always on board Skylax . Of course, if you catch a fresh tuna the difference between fresh and tinned is chalk and cheese time Tinned sardines are useful for sardines as are tinned anchovies in some dressings and in a salad Niçoise. Tinned fish like mackerel and others in tomato sauce are not to my taste.

Tinned meat

Some boats carry tins of corned beef and spam. Personally, I’m not fond of the stuff and hardly ever use it.

Tinned fruit

We carry a modest selection of tinned fruit, really just some fruit salads, apples including apple sauce, pineapple and apricots. Most of it is for breakfasts with cereals and yoghurt when we have run out of fresh or cannot get fresh fruit.

cooking-on-a-yacht-chef-Skylax_s-cockpit-table-is-a-retrofit-job-and-works-well-up-to-four-people.

Fresh poultry and meat

In most parts of the world you can find frozen chicken. You can often get bags of frozen chicken bits, wings, thighs, and some unidentified bits, as well. On passage we normally take a frozen chicken or two on board, wrap it in several layers of newspaper and pop it in a plastic bag and then put it in the bottom of the fridge/freezer. In a fridge it will slowly defrost and will be ready to use in 5-6 days. In a freezer it will last for months.

Duck

In places you can buy vacuum packed duck breast. Well worth it though it will only keep in the fridge for a few days.

Beef, lamb and pork

With the partial exception of pork in Muslim countries, you can find fresh or frozen meat in most parts of the world where there are a few shops and a bit of a population.

In The Tradewind Foodie there are expanded sections and more on all these topics plus an account of our experiences around the world with food, sections on the history of food in different areas, and a pile of recipes we cook on board.

So, keep everyone happy. Somehow food, even a simple meal, tastes so much better on board and at the end of a passage there is nothing quite like a few drinks in the cockpit and dinner with fellow travellers.
